Kristen's Zucchini Bread This recipe comes from Kristen Harrington, Finance & Admin Coordinator. Put your summer zucchini stock to great use! Make this treat with your favorite add-ins to share with friends and family. Kristen shared her zucchini bread with the 1B staff recently, and it was DELICIOUS! Try Kristen’s recipe for yourself with local ingredients from Berkshire Food Co-Op or your local farmers’ market.

Ingredients:

  • 3 Cups All Purpose Flour
  • 1 tsp. Salt
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 3 tsp’s Cinnamon
  • 3 Eggs
  • 1 Cup Vegetable Oil
  • 1 ½ Cups White Sugar
  • ¾ Cup Dark Brown Sugar
  • 3 tsp’s Vanilla Extract
  • 2 Cups Grated Zucchini

Instructions:

  1. Sift together flour, salt, baking soda, baking powder, and cinnamon.
  2. In separate large bowl or stand mixer, cream together eggs, vegetable oil, both sugars and vanilla until smooth and creamy.
  3. Slowly add sifted dry ingredients into creamed mixture and beat well.
  4. Stir in zucchini and your favorite add-ins until combined. Pour battered into prepared pans and bake for 60-70 minutes. More time is needed when adding optional ingredients.
  5. Cool for 20 minutes before removing from bread pan to completely cool.

Note from Kristen: 

This is great on its own, but be creative with your favorite add-ins. I enjoy 1 cup of walnuts and 1 cup of chocolate chips!
