Cherry Pie for a Winter Day

Ingredients:
- Two 14.5oz cans of tart cherries
- 1/4 cup flour
- 1 cup sugar
- 1 teaspoon cinnamon
- 2 tablespoons butter
- pie crust (I cheat and buy pie crust, but I admire overachievers)
Instructions:
Drain cherries thoroughly, saving 1/2 cup of liquid. Sift the flour, sugar, and cinnamon into a pan. Add the cherry liquid and heat to a low boil. Stir constantly until thickened. Once thickened, add the cherries. Place crust in a 9in pie pan and fill with cherry mixture. Add small tabs of butter, and then secure the top crust. Make cuts in the top crust to vent. Bake at 350 for 30-45 minutes. Let cool and then enjoy!
Note from Lucy:
Try adding a 2-3 tablespoons of Berkshire Mountain Distillers bourbon to the pie mixture if you’re feeling adventurous!
