This vegetarian dish comes from Ben Lamb, Director of Economic Development. Try Ben’s recipe for yourself with fresh vegetables from your local farmers market! It is full of flavor and sure to please!
Ingredients:
- 1 pepper
- 1 onion
- 1 carrot
- 3 cloves garlic
- 1 can black beans
- 1 can kidney beans
- 1 tsp cumin
- 1/2 tsp coriander
- Salt
- 1 tbsp basil
- 1 tbsp cilantro
- 2 tbsp balsamic vinegar
- Butter
- Olive Oil
Instructions:
- Fine dice pepper, onion and carrot and sauté in a 50/50 mix of olive oil and butter until soft.
- Turn down heat and add finely diced garlic, 1 tsp cumin, 1/2 tsp coriander, 1 tbsp basil, 1 tbsp cilantro, 2 tbsp balsamic vinegar
- Mix and cook while constantly mixing for a couple minutes
- Add drained and rinsed beans, cover and cook until heated through
- Salt to taste
- Cook long grain basmati rice (add saffron if available)
Best served with a healthy dose of Marie Sharp’s Habanero XXX Sauce and a squeeze of lime.
